Chocolate avocado mousse
Ingredients • Raw cacao powder - 4 tablespoons • 2 ripe avocados • Coconut milk or other liquid - 2 tablespoons • Agave syrup - 3-4 tablespoons
Directions Place all of the ingredients in a blender or food processor and blend until smooth and creamy. Add more cacao, coconut milk or agave if needed as you blend. Spoon into jars and leave to set in the fridge for at least 30 mins.
Coconut chia pudding
Ingredients • Fresh fruit of your choice • 5 teaspoons chia seeds • Approx 1 small cup coconut milk • Agave syrup - optional for extra sweetness
Directions Put the chia seeds and coconut milk in a bowl and mix together well. Leave to stand for at least 15 minutes while the seeds develop a gelatinous coating, before stirring again and adding more milk and agave if required. Top with fruit of your choice
This is perfect for a hot day.
Ingredients • Watermelon • A mix of any seasonal fruits you like - these will form the topping, so you can use for example blueberries to look like ‘olives’, or tangerine segments to be your ‘mushrooms’ • Coconut chips for the ‘cheese’ topping
Directions Slice your watermelon into pizza-slice shaped pieces. Lay your fruit on top in whatever way looks attractive then sprinkle with the coconut chips.
